La Ferme de la Massinie offers you processed products from black Gascon pigs raised on the farm (Issac, Périgord) in accordance with traditional recipes!

Our products are produced in accordance with the Organic Agriculture specifications.

Sausage

Our sausages are dried for a minimum of 6 weeks.

Ingredients: Gascon black pork meat and fat*, salt, pepper*, coriander*.

* products from organic farming.

Coppa

Our coppas are dried for approximately 2 months.

Ingredients: Gascon black pork*, fine Guérande salt, pepper*.

* products from organic farming.

Prices :

whole (from 300g): €75/kilo

100g sliced, vacuum-packed: €8.50

Dried belly

Nos ventrêches sont séchées pendant environ 2 mois. 

Ingrédients : viande de porc noir gascon*, sel fin de guérande, poivre*.

* produits issus de l'agriculture biologique. 

Tarifs : 

entier (à partir de 300g)  : 45€/kilo

100g tranché, sous-vide : 5,50€

Dried loin

The loin is dried for a minimum of 12 weeks.

Ingredients: Gascon black pork*, fine Guérande salt, pepper*.

* products from organic farming.

Prices :

whole (from 300g) : €75/kilo

Ham

Our hams are processed by the Maison du Jambon au Pays Basque and dried for a minimum of 12 months.

Ingredients: Gascon black pork*, salt.

Rate :

unsliced 95€/kg

sliced, vacuum-packed 130€/kg

Terrines and black pudding spread

The canned goods

Terrine des Gascons : Gascon black pork meat (liver, throat, breast)*, fine Guérande salt, pepper*, milk*, dry white wine*, egg*, shallot*.

Pâté de tête : Gascon black pork (head)*, fine Guérande salt, pepper*, gherkins*, shallots*.

Boudin spread : Gascon black pork (head, tongue, heart)*, fine Guérande salt, pepper*, onions*.

Rillettes des Gascons :

Gascon with Espelette pepper : Gascon black pork meat (liver, throat, breast)*, fine Guérande salt, pepper*, milk*, dry white wine*, egg*, shallot*, Espelette pepper.

Enchaud : pork confit

15€ per 400g pot

Lard : pork fat to replace oil/butter €7.50

La viande fraiche

After numerous requests from you, we are launching fresh meat packages in order to satisfy the most gourmands!

Package of 5kg of fresh Gascon black pork meat:

Roast, ribs, sausages and belly.

€24.90/kg, or €124.50 per package.

The next packages of fresh meat will be available in the fall of 2024 (Bordeaux delivery or collection from the farm).

Remember to book in advance.
